It's difficult enough to find good sparkling rose, but at $10 bucks it's nearly impossible; this pinot noir-based sparkler is from Burgundy and offers excellent body, fine berry character and a beautiful color; fantastic with salmon; a great discovery.

Made entirely from Pinot Noir from the heartland fo Burgundy, this wine has an attractive light-pink color. The taste is very delicate--red currants and crisp raspberries, with just a touch of softness--but leaves a fresh, uplifting taste.

We saw promise in crémants from Louis Bouillot, a rapidly growing Boisset label. It hails from Burgundy, which not only grows the same grapes as nearby Champagne but once has its own robust sparkling wine industry. The standout is the Bouillot Perle d'Aurore rosé ($11), made from Pinot Noir, bone dry but with a lovely balance and pretty berry on the nose.

An attractive pale onion skin rosé, its freshness given definite structure by tight tannins and wild raspberry fruit flavors. It is certainly as much wine as sparkler, with a final richness.

Pale salmon color; fine bread. Toasty, yeasty aromas add scents of cinnamon and plum. The fruit is even more apparent on the palate, where plum and strawberry flavors predominate. It's fairly full-bodied and would work better with meat dishes than on its own.
