Lulu B. Pinot Noirs are issued from select vineyards near Limoux, an appellation on the western edge of the Languedoc region. The vines are planted on hillsides in calcereous soil high in rock, sand and fossil content. Cooler night-time temperatures and coastal breezes are perfect for growing concentrated, robust Pinot Noir. This year's harvest extended from the end of August until beginning of September. Vinification took place in small wood and stainless stell barrels. After a five-day cold maceration, the alcoholic fermentation was followed by daily cap-punching. The length of the maceration is determined by regularly tasting the grape must. 30% of the assemblage is aged in oak.
